James has asked the Head Chef's at all his restaurants to come up with inspiring menus that reflect the style of each place.
Tower Head Chef, Jose Dalto brings you dishes packed with Scottish ingredients, full of flavour and colour to do justice to the exceptional atmosphere and location of the restaurant in Scotland's National Museum.
Expect a Scottish game terrine with beetroot carpaccio, chargrilled and marinated squid, confit duck leg, sustainably sourced cod or how about some Isle of Mull cheddar with quince jelly.
