Head Chef, Jose Dalto is inspired by Scotland’s bountiful larder and so expect a menu packed full of the best and freshest Scottish ingredients. Scottish seafood comes from the West Coast with Guy Greives’ hand-diving our scallops off the coast of Mull, there's the Tower's famous North Berwick lobster thermidor, there’s also a host of Scottish game and some of the best Scotch rib eye steaks you’ll find anywhere in the world.
